The flour used is composed of a mix of selected flours, including for example that of soy. Its maturation for various time in the cell (48/72 hours) allows to start a natural process, which uses the enzymes already present in the flour. Practically the splitting of complex sugars occurs in simple ones. The result is a soft and highly digestible dough. Let's say that in this way; half of digestion is done for you.
Every first Friday of the month Ristorante Cucina Mia from 2 pm to 5 pm opens doors for everyone to taste and discover the goodness of this dough (of course you are the guests). Please note that it is obligatory to reserve and specify the number of people that will participate.
