Chef Ryan will demonstrate how to create a Christmas special - Seafood Marinara Spaghetti!
Tomato Marinara Sauce
- 1 Pot of Boiling Water
- 1 Bowl of Ice Water
- 500g Whole Tomatoes (score X on back of tomatoes)
- 2 tbsp. Extra-Virgin Olive Oil
- 1 Yellow Onion (finely chopped)
- 2 cloves Garlic (sliced)
- 2 stalks Fresh Oregano Leaves (chopped)
- 1 stalk Fresh Basil Leaves (chopped)
- 3 Bay Leaves
- To taste - Salt
- To taste - Black Pepper
- To taste - Sugar
- Prepare a pot of boiling water and a big bowl of ice water.
- Score the bottom of the tomatoes with a “X” using a paring knife.
- Blanch tomatoes in hot water for 30 to 60 seconds (do not overcrowd pan).
- Remove after approximately 45 to 60 seconds when skin is peeling off.
- Add to ice water immediately and remove after 45 to 60 seconds.
- Remove tomato skin and cut tomato into small pieces.
- Transfer to a pot and lightly pulse with hand blender / processor.
- Add olive oil to a heated pan and cook onion and garlic till fragrant.
- Add tomatoes, bay leaves, oregano and basil leaves.
- Cook on medium to high heat and stir frequently. (be careful not to burn)
- Season with salt, pepper and sugar to taste.
- When thickened, the sauce is ready to be used.
Seafood Spaghetti
- Sufficient Salted Boiling Water
- 150g Spaghetti
- 2 tbsp. Extra-Virgin Olive Oil
- 2 cloves Garlic (sliced)
- 4 Tiger Prawns (peeled and deveined)
- 1 Medium-Sized Squid
- 100g Skinless Salmon Fillet (cut into chunks)
- Sufficient Tomato Marinara Sauce
- Sufficient Reserved Pasta Cooking Water
- 2 tbsp. Unsalted Butter
- To taste - Salt
- To taste - Black Pepper
- Garnish Basil Leaves
- 2-3 Honey Cherry Tomatoes (halved)
- Cook pasta in a pot with salted boiling water till al dente for about 5-7 minutes.
- If cooking for children, cooking till very al dente (which means less firm).
- Add olive oil to a heat pan.
- Add garlic and cook till fragrant while stirring frequently, about 30 seconds.
- Add in prawn and cook till orange, about 30 to 45 seconds.
- Add in squid and cook for about 30 seconds before adding in salmon fillets.
- Step 6 and 7 can be substituted with chicken for dietary / religion requirements.
- Cook for about 30 seconds.
- Add in tomato marinara sauce and pasta.
- Reduce heat to medium and add butter, stir to coat.
- Add pasta cooking water as required.
- Continue cooking for about 45 seconds until the sauce has coat the pasta.
- Serve on a plate and garnish with basil leaves and honey cherry tomatoes.
