Chef Ryan will demonstrate how to create yummy Pineapple Fried Rice in 15 minutes!
Ingredient List:
- 1 tbsp. Vegetable Oil
- 2 tbsp. Unsalted Butter
- 3 Shallots (peeled & sliced)
- 3 cloves Garlic (peeled & sliced)
- 1 ½ tsp. Shrimp Paste
- 100g Chicken Breast (cut into even small pieces)
- 1 tsp. Sesame Oil
- ½ tsp. Light Soy Sauce
- Pinch White Pepper
- 6 Prawns (heads removed)
- 2 cups Cooked Rice (chilled overnight)
- 1 Pineapple (halved and diced into small equal pieces)
- Garnish Chicken Floss
- Garnish Red Chilli Padi (chopped)
- Garnish Small Lime (halved)
Pineapple Sauce
- 2 tsp. Tumeric Powder
- 2 tbsp. Pineapple Juice (blend the pineapple cubes from the remaining half)
- 2 tbsp. Fish Sauce
- ½ tbsp. Sugar
Recipe:
- Marinate the chicken with sesame oil, soy sauce and pepper.
- Prepare the pineapple bowl by removing the flesh and core from the pineapple.
- Leave half for the flesh for blending and the other half for frying.
- Mix the ingredients for the pineapple sauce until well combined.
- Add oil and butter to a heated pan.
- Add shallots and garlic and stir-fry till fragrant.
- Add shrimp paste and stir fry till aroma is released.
- Add chicken and stir fry till cooked.
- Add prawns and cook through.
- Add rice and pour the sauce over the rice.
- Stir fry till the rice is coated well with the sauce and shiny.
- Add the pineapple cubes and stir fry for about a minute.
- Transfer the pineapple fried rice to the pineapple bowl.
- Garnish with red chilli padi, small lime and chicken floss.
